Maroulosalata or Greek Lettuce Salad

I needed something green for lunch. 



A Greek salad without the tomatoes and olives sounded strange. But this is a well known alternative to the well known Greek salad.



The main component is romana lettuce. Crunchy and tasty. A little bit of cucumber and some green onions and lots of fresh and dried herbs balanced it. Topped with Feta and a lemon and olive oil dressing. 



Use fresh dill, if you can get it. But dried dill is good too.

Ingredients for 1 big bowl for 1 or 2:

1 large head romaine lettuce

1/3 cucumber

2 green onions

80 g Feta

Dill, chives, parsley and pimpinelle

1 lemon juiced, 

double the amount of Olive oil to lemon juice

1 tbsp agave syrup

Salt, pepper

Microgreens

Wash and shred the romaine. Get the wet middle part out of the cucumber and chop the green onion. Do all the fresh herbs. Use some sprouts or microgreens.



Crumble the feta on top. Prepare the dressing. Pour it over the salad and mix and serve.
