Sayadieh or Lebanese Fish on yellow Rice

I wanted to eat fish and rice. Those were the two ingredients I put on the search line on Pinterest.



I am cooking Lebanese food today.



The onions are the star in this rice dish. They get soft and a little caramelized before the spices go in. They get sauteed a bit and then the washed Jasmin rice is added. Stir well and let it get cooked a bit.




I used some vegetable stock to fill it up, but water is good too. Cook the rice on low for 12 min, fluff it and set it aside for 6 min.



During this time the fish has time to be cooked in the pan. Just seasoned with salt and pepper and for 3 min on the first side and 2 min on the second side.



A bit of butter to finish. A light drizzle of lemon juice. Serve it on top of the yellow rice with some parsley.



Ingredients:

250 g cod 200 g catfish

1 tbsp oil, 1 tsp butter, fish seasoning

Lemon juice



Rice:

1 rice cooker cup Jasmine rice

2 shallots, 4 small red onions, 2 garlic cloves

2 tbsp olive oil

1tsp cinnamon, 1 tsp cumin, 1 tsp coriander, 2 tsp tumeric, pepper

2 tsp homemade veg stock

2 1/2  rice cooker cups hot water
