The local bakeries are selling Danishes with all kinds of fruits on top. Strawberries are the topseller.
But lots of sugarpaste on top are not my favourit and the prices have gone through the roof.
I was grocery shopping and stood with my shopping cart in front of fridges. I saw Danish ready made pastry dough. Fresh strawberries were already in the cart.
Lets bake some Danishes myself!
First step:
Vanilla pudding powder
250 ml whole milk
20 g sugar
Prepare the pudding and put clingfilm on top to prevent skin on the pudding. Let it cool down.
Second step:
Preheat the oven 200 C fan.
1 ready made Danish dough
30 g almond slices
1 egg yolk, 2 tbsp milk
Cut the dough in 6 or 8 pieces. Depending if you like them bigger or smaller.
Fold the edges in and brush them with eggwash. Put some almonds on the edges. Bake for 15 min. Cool down on a wire rack.
Third step:
200 g strawberries sliced and sprinkled with sugar.
Forth step:
Press down the middle of the pastry with your fingers, add 2 tsp vanilla pudding and top that with strawberry slices.
Fifth step:
Icing sugar plain or with golddust
