German strawberry season has finally started.
Due to our lousy muggy weather with so much rain, lots of fields are flooded and that increased the strawberry price a lot.
But I found a recipe in one of the supermarket leaflets: all about strawberries. I am going to a BBQ on Tuesday and I will take the parfait with me.
It takes a lot of dishes, happy to have a dish washer.
Recipe for a 25 cm loaf tin:
650 g cleaned strawberries
100 g icing sugar
1 tsp lemon juice
2 tsp vanilla sugar
4 egg yolks
200 g creme fraiche
500 g double cream
Put 500 g strawberries, 50 g icing sugar, lemon juice in a blender and give it a mix.
Place clingfilm in the loaf tin and pour 1/3 of the strawberry mix in. Freeze for 1 hour.
Chop 150 g strawberries and set aside.
Beat egg yolks, 50 g icing sugar, vanilla sugar until creamy. Add mixed strawberries and creme fraiche.
Beat the double cream to soft peaks. Fold it in with the chopped strawberries. Fill up the loaf tin and freeze over night.
